Ice sculptures are a fun accessory for your buffet or beverage table.  They often require electricity, however, so coordinate with your facility about where you can feasibly put them.  They also melt, potentially creating a mess, so make sure your caterer (or whoever is in charge of the sculpture) is prepared to empty the overflow container throughout the night.

I also recommend sending WRITTEN instructions if you're going to have your names carved on the sculpture.  It does give guests something to talk about when the bride's name is misspelled, but I'm sure they can find other topics when it's right.   

Ice sculptures also make a fun and interesting way to display shrimp, but make sure you coordinate this with your caterer to find out what size they'll need.

When the only daughter of a cake designer got married, what did they use for a remarkable cake stand?  An ice sculpture!  Just make sure you make arrangements to catch the melt-water if you choose to use this idea.
